Red Mullet is a staple British species that we, oddly, don't really eat that much of. Probably doesn't help that so much of it gets exported! A gorgeous, gamey meat that is beautiful grilled but can also be amazing done as ceviche. Roast or grill these whole fish - they take asian flavours really well.
